This recipe falls under what I call “casual cakes,” meaning cakes that are perfectly suitable for Sunday brunch, afternoon tea, or any random Wednesday night when you need to fulfill a relentless cake craving without having to make something completely over the top. There’s a whole chapter in my book dedicated to these cakes without occasion.

With layers of fresh apple cake, honey buttercream, and a touch of crunchy oat crumble, you may even end up devouring a slice of this one for breakfast!

Q: I’m making my first — yes, very first — apple pie. I’ve baked lots of other goodies, but I’ve never tried making an apple pie. My partner baked one last night; it was beautifully cooked on top, but not the bottom. I’d like to avoid those issues. Any advice?

Like most new parents, after I had my first child I wondered when things would be back to normal. When would I feel and look like my old self? When I would have time to do the things I did before? When I would bounce back?

Three weeks ago, I had my fourth child, and I still find myself asking these questions. I can’t help but notice the extra baby weight that didn’t simply melt away after delivery. My maternity jeans are still the only pants that fit me. And of course, my workouts have evaporated into thin air.
