Like most of my work, this Afro-Asian 4th of July menu has the texture of autobiography and draws heavily on the way my family eats at home. Don’t get me wrong, we don’t pull out all the stops every day like we did for this menu. But on weekends, holidays, and celebrations, we invite family and friends over to cook multiple dishes and break bread together, all while talking, laughing, and dancing.
My wife and I are very excited to collaborate with The Kitchn on this menu, and we hope it inspires your 4th of July celebration — as well as other family and community gatherings throughout the summer!

It may be part of the human condition to love burgers. You don’t have to love (or even eat) red meat — there are pescetarian, vegetarian, vegan, Paleo, and poultry burgers that are just as satisfying to sink your teeth into.
And that’s the thing about burgers, isn’t it? They give you that gratifying feeling of picking up a sandwich with both hands, opening wide, and taking a big, honkin’ bite of savory pleasure.

To keep these salmon burgers moist and tender, chop the salmon by hand rather than in the food processor. The salmon is easiest to chop when quite cold, as this makes the fish more firm and easier to cut. You can stick fresh salmon in the freezer for about 20 minutes — it won’t freeze, but it will firm up a bit.

Depending on where you live and your proximity to a popular summer travel destination (the Grand Canyon? Disney World? New York City?) you may find yourself deep in houseguest season. I don’t live in a particularly touristy city, but I host houseguests frequently, and I think it’s part of the fun of having a house with room to share. If you can boil a pot of water, you will have no trouble making these delicious and refreshing pops. The rich sweetness of the mangos is mellowed out by the creamy coconut milk infused with bright and aromatic kaffir lime leaves, which are often paired with coconut milk in savory Southeast Asian dishes.
