If I’m not feeling like making something elaborate and just want an easy, warm dessert to end an evening, this is where I turn: baked apples. Scoop out the core and stuff the insides with a mix of oatmeal, brown sugar, cinnamon, and nutmeg. The baked apples soften into a spoonable treat while the brown sugar melts down into a caramel syrup.

The only thing that could make this simple autumn dessert even better would be a scoop of ice cream on the side. Naturally.

We are getting into the days when hearty casseroles and warm cheesy things are starting to sound like a good idea again; my absolute favorite time of year. I’m a sucker for a good whole-grain breakfast bowl. In many ways, I consider it the perfect breakfast; grains are a great vehicle for seasonal fruit, nuts, seeds, dried fruit, and yogurt. While I tend to stick to cooking grains with water or broth when making dinner, in the morning I like to get a little creative and cook them with something other than water.
