Most folks aren’t cooking at 2 a.m. The rational ones are fast asleep in awesome pajama pants that still have the string, because their cat probably didn’t chew it out of the waist. Their hair is perfectly coiffed on the pillow, and they breathe deeply with adorable little kitten snores.

Me? I’ve discovered that 2 a.m. is the perfect time to do lots of things in the kitchen. If there was ever an MVP of desserts, I have no doubt it would be awarded to this Nutella mug cake. When all you need is one bowl, four ingredients, and five minutes for a seriously chocolatey cake that can crush any sweet tooth, it’s hard to argue otherwise.

Between our kitchen tours and the home tours on Apartment Therapy, we’ve drooled over many stunning Parisian kitchens over the years. Above all else, we’ve been impressed by the ability of our French friends to do so much with their small spaces. Here are a few of our favorite organizing ideas from tiny (but thoughtful) kitchens in the City of Light.

Until last year, when I finally got a full-sized food processor, I relied on my small yet sturdy mini chopper. For years it ranked as my most-valued kitchen appliance, pulling its weight valiantly.

And, surprisingly, my love of the mini chopper didn’t change when I got a food processor. Because as much as I love the full-sized appliance, there are just so many times that the mini chopper still proves itself more useful.

Oven-dried eggplant is so much like beef jerky — delightfully chewy and dense — that it seems only fitting to marinate the eggplant slices before drying and dubbing them eggplant jerky. This is an excellent snack for traveling, and the best part is you don’t need a dehydrator to pull this off.

For reasons beyond sanity, I’ve driven from Iowa to New York more times than I care to share. What I do want you to know is podcasts and edamame got me through those trips. Along with the full suite of Stuff You Should Know, On Being, and Inquiring Minds, I munched on edamame all the way home. Here’s why it’s my recommended road snack of choice.

When you’re burning the midnight oil and your stomach starts to grumble, what should you reach for to fuel you through the night? We decided to go directly to the source. We mean writers, of course. After all, who knows better the pain and pleasure of the midnight munchies than the literary set?

This month, we asked 20 authors, past and present, to share what they snack on in the wee hours.

Jodi Ellen Malpas is the New York Times bestselling author of two steamy trilogies and the upcoming standalone novel, The Protector (Forever, September 2016). But she wasn’t always a writer: Until she self-published her first book, This Man, she was working in her family construction business.

The UK author is full of surprises — including her midnight snack of choice.
