Do you love cheese and light, fluffy bread? That’s a silly question. Cheesy bread is one of the most satisfying combinations we know — especially when it’s paired with a tall glass of something crisp and bubbly. In which case, you should really meet gougères, the French cheese puff that you should be serving for any appetizer-fueled happy hour (“Appy Hour,” as we like to call it). It is hard to overstate how delicious and versatile gougères are, but in addition to their flavor appeal, these cheese puffs require only a few kitchen staples and they can be made ahead.
Need more convincing? Here are five reasons you should be serving gougères as appetizers at your next happy hour.

I have a not-so-secret love affair with saltine crackers. They are crunchy and salty and they are cheap. The only strike against them is that they’re a little plain, but this actually works to their advantage! Saltines are a blank canvas — perfect for soaking up butter and warm spices, or as a vehicle for prosciutto, smoked salmon, or even sorbet.
I almost always have a sleeve on hand, for eating or for gussying up for guests. Here are seven ways to dress up my favorite cheap cracker.

Gougères are one of my favorite party tricks. A cheese puff made from the French pastry dough pâte à choux, these little bites are incredibly easy to eat. Mastering their preparation takes some know-how and some practice. To get you closer to puff perfection, here are five common gougères-making mistakes to avoid.

I love to bake. I’ll bake for birthdays, holidays, parties, and random Wednesdays — as long as I have time. Unfortunately, I don’t always have 30 minutes to make from-scratch chocolate chip cookies or an afternoon to devote to making my famous pecan pie. But a gathering has to have a dessert, right?
There are plenty of times when things are just too crazy and I have to fall back on the store-bought stuff. And honestly, no one ever seems to mind. For one, it’s not like my friends and family would demand that I pull an all-nighter to make them a three-layer cake. I also have a roster of really good (like, really good) store-bought treats that always impress. I’ll pull out a fancy platter and call it a day. (Note: I never take credit for the baking, though — that would be unethical!)
Here are some of my go-to treats.
