Sometimes you read about these hacks on the internet, and while some part of you desperately wants to believe they’re real, there’s another part of you that is certain that it’s all a fabrication and will never work. This hack rang both of those bells for me. After the rush of Thanksgiving, you’re on your last lap to the Christmas Eve finish line. Sounds like a good time to up your meditation game among other things.

Week 8 of this year’s Fit for the Holidays challenge starts this Sunday. Please read Fit for the Holidays Challenge introduction if you haven’t done so already. The challenge runs until December 24th and started October 8th. Keep looking for updates every weekend. The Parmesan cheese I grew up sprinkling on my spaghetti came straight from a green tube labeled “Kraft.” This was before anyone worried whether those jars of Prego sauce were authentic, before we wondered if we should be eating fresh pasta instead of dried, and long before the green tube of “Parmesan” was discovered to contain wood pulp.

Wood pulp or no, I maintain a nostalgic love for the pebbled cheese of my youth and would happily toss it on my noodles. But it’s definitely not real Parmigiano-Reggiano. In fact, very few cheeses packaged and sold as Parmigiano-Reggiano are.
