At a rest stop somewhere in Pennsylvania, my family and I were huddled around the back of the car, passing around a Ziploc bag of leftovers from a favorite pizza place in Cleveland. We had a few more hours of driving ahead of us before we reached our home in Virginia, and we were too tired to face the holiday traffic on empty stomachs.

The problem was I had just begun the ketogenic diet, which required cutting out grains and sugars, and I was determined not to fall off the wagon. I had already made it through Thanksgiving without diving face first into the mashed potatoes and I’d be damned if I was going to lose my willpower over leftovers. We were lucky when we had our kids: My husband had two older sisters who each already had two kids. So by the time we had our first child, they’d tested all the products on the market, picked their favorites, and weeded out the ones they thought they needed but hardly ever used. They lived two different lifestyles — one in a New York City apartment, another in a big suburban house — so sometimes, the products one sister thought were indispensable didn’t even play into the other’s life. That was fine — we got to pick and choose what worked for us.

Instructions:

Halve each avocado, remove the pit, and slice the flesh into thin strips.

Place the avocado pieces in a mixing bowl, and use a fork to gently mash them.

Add in a cup of Chipotle Lime Mayo, and mix or mash the mayo into the avocado until you’ve achieved a uniform dip with guacamole-like texture.

Dice the cilantro.

Chop the bacon strips into bite-sized.

Place the bacon dip into a serving bowl, and top with bacon and cilantro pieces.

Serve with crisp veggies or other Primal snack. Enjoy!

Huevos rancheros has been one of my favorite egg dishes since I first tasted it in Mexico, nearly 20 years ago. It’s a hearty, satisfying breakfast, which means it can also hold its own for dinner.

In this version, huevos rancheros go the way of the casserole with a double layer of corn tortillas, a generous helping of beans and cheese, and the signature spicy-sweet tomato-chile sauce. Everything is stacked into a 9×13-inch baking dish and then topped with a few eggs and baked in a hot oven until the whites are set and everything is melty and delicious.

I have a tendency to pick recipes that are sneakily expensive. You know the ones. The recipe might require a bunch of spices I don’t already have in my arsenal, some kind of special olive garnish I didn’t think would cost me a lot of money, or dried cherries (my favorite), for example. The rest of the ingredients might seem simple enough, but these special add-ons always mean I’m spending more than I probably should.
