If something involves ricotta, I don’t need to read any further to know I am sold. So when I stumbled upon this blood orange, almond, and ricotta cake on Smitten Kitchen a couple of years ago, I immediately filed it under “must make.” Deb credits the cake to Elizabeth Prueitt of Tartine Bakery, who herself adapted it from London’s famed River Cafe. Last year, it made its way into Elizabeth’s cookbook, Tartine All Day, as cornmeal-ricotta upside-down cake — different name, same cake.

I continued to drool and wonder why this cake that I still hadn’t made yet was haunting me. Here we are another year later, and finally (finally!) I baked it. All I can say is I really missed out on a couple of good years with this incredible cake. Please learn from my mistake, stop whatever you’re doing, and bake this thing immediately.

I once grabbed an ordinary-looking red bell pepper from the produce section of a New York Whole Foods without checking the prices, and when the cashier rang it up I was horrified to see it cost $8. I was too embarrassed to do anything but pretend I did it on purpose, and to this day I have no idea why that single pepper cost so much. It’s easily the most I’ve ever paid for a piece of fruit or vegetable.

On a pound-for-pound basis, it cost even more than Oprah’s $50 box of frozen blueberries. But neither of those splurges holds a candle to the woman who just got charged $500 over a single apple that was supposed to be free.

The Instant Pot has become the most sensationally popular kitchen appliance in decades. One report indicated that some ten million Instant Pot units were sold on Amazon.com in the fourth quarter of 2017 alone! Instant Pot is the genericized trademark for what is technically called a multi-use pressure cooker. There are many other brands for these space-age, tabletop units touted as the inclusive replacement to nine common kitchen appliances (including a stovetop pressure cooker, rice cooker, and slow cooker/crock pot) that speed cooking time by a factor of two to six times while using 70 percent less energy than the stove, oven, or other gadgets.

In short, it’s a perfect tool for keto eating. You get all the benefits of a keto diet—with the least amount of time, strain and effort in the kitchen. Today I’ve got 75 low-carb, hassle-free, and delicious recipes to get you started. 

You know I’ve authored numerous cookbooks with my incredible partners, but I confess to not having much interest in spending hours in the kitchen cooking gourmet meals. I feel like the Instant Pot was made for folks like me—folks with a sincere interest in eating healthy, delicious foods, but not always wanting to devote the precious time necessary to prepare an elaborate meal.

It doesn’t get easier or more convenient than tossing an entire pasture-raised chicken into the pot with some onions, garlic, and sun-dried tomatoes and having a delicious meal ready in half an hour—without tending to it at all! I also like throwing a half-dozen eggs into the pot for a perfectly hard-boiled result in five minutes of cooking. With my world famous Big-Ass Salad (the old video with six-figure viewers is a decade old, so check out this updated link!), I’m honestly an eyeball gourmet: if I see hard-boiled eggs or ready-made chicken in the fridge I’ll throw them in, but if they’re not there I’m too lazy to make something on the spot. These days, my fridge—and my Big-Ass Salad—is looking much better thanks to the ease of preparation that the Instant Pot provides.

While we write about Costco, Trader Joe’s, Aldi, and other top stores all the time, there’s just so much to keep up on. Between the sales, new products, and smart ways to use said products at home, we just can’t cover it all. (But we will keep trying!)
