Classic creamed spinach is good in the same way that mashed potatoes or mac and cheese is — it’s usually all cream and flour, with the spinach adding only color. This is a different dish, and that’s why I call it creamy (not creamed) spinach.

The cream’s function here is to mingle with the garlic and nutmeg, adding just enough richness to elevate things above straight-up sautéed spinach. And the dill stands as a green, too, combining with the spinach to make something like spanakopita in a bowl.

The one word you should avoid when buying cheap rosé is not Franzia or boxed — it’s domestic! For all you U.S.-based readers, rosé shopping is one time when you don’t want to buy local. This is not to say there aren’t good American rosés, it’s just that most of the good ones start at just under $20 and go up from there.

My daughter Sadie and I went to Italy during the time I was writing Eating with the Ground Up, and although the trip was all pleasure and no work I couldn’t help but scribble notes down in my little book when a vegetable had been prepared well.

Sadie ended up doing the same — often at the end of the day we’d compare notes, trying to figure out exactly what had made that particular cream sauce or pizza so mind-blowing. We both agreed that this dish of asparagus bacon pasta needed to be recorded and reproduced.

Rest as needed between sets. When scheme is listed as “3 x 10″, it always refers to “Sets” x “Reps”.

 

Today, each rep will feature an extension from the “holster” position (elbows bent, inside of arms against your body) to arms straight, hold for 3/1000, and return to holster to begin the next rep.
