Roast chicken is always a good idea. I don’t think I’ve ever regretted making it — especially never on a Sunday when I’ll have some that night for dinner and then plan for a week of meals that make the most of it. And if you’re not cooking your roast chicken over a bed of veggies … well, you’ve got something delicious to look forward to trying!

But one of the most important lessons I’ve learned about roast chicken comes from Ina Garten (if you haven’t heard — she’s got a way with chicken). This lesson is on what size chicken to buy.

You can’t fool me or my husband when it comes to subbing ingredients. We can always tell when applesauce is swapped into baked goods. We know instantly when a fountain soda is diet. And we’ll call you out if you’ve used avocado instead of butter. These swaps aren’t necessarily bad things — as long as we know about them before they enter our mouths.

The only swap we’re notoriously not okay with is pasta. Zoodles and spaghetti squash, while delicious, are not pasta and should not be treated as such! Gluten-free pasta is, well, not pasta. (It’s gluten-free pasta, which is different!) And whole-wheat pasta, although good for you in comparison, is never okay in our book. If we’re gonna eat pasta, we want pasta — the stuff made of eggs and white flour.

Kitchen cabinets are just big boxes on your walls, which makes them great for storing dishes — and for casting harsh shadows on your counters. Think about how much better and easier cooking would be if you had some lights to help you see what you were doing. It’d sure be nice, right?

It’s also totally possible — even if you rent your current home or don’t want to hardwire anything new. Here are some great inexpensive, easy-to-install options.

Salmon is a weeknight dinner staple for a reason — when done right, it’s quick, versatile, and deliciously tender. But we’d be hard-pressed to find someone with a perfect track record for flaky, succulent salmon every time. All too often, salmon turns out dry and tough.

Here’s the reason your salmon turned out dry, and the best ways to make sure it doesn’t happen again.

Way back when, in the practically prehistoric days of the internet (I’m talking 2009 here), we ran a reader recipe contest. Quick Weeknight Meals gave us a nice collection of really memorable and delicious weeknight meals. Here’s one of my personal favorites: Nicole’s lasagna roll-ups, which boast the trifecta of being easy, quick, and rather good for you.

Upon retesting, these pasta pinwheels turned out to be one of the easiest (and tastiest) dinners I’ve made all month, and given that they’re stuffed with low-fat cottage cheese and oodles of spinach.

Whether you eat them grilled, wrapped in prosciutto, or just cut up into wedges, watermelons are one of the hallmarks of summer. And luckily, they’re considered the best value fruit on the market.

Here’s how much you should plan to pay — and how to get the most bang for your watermelon buck.
