As a kid, my summertime food fantasy was to have a chest freezer brimming with Hot Pockets, Swan’s frozen food treats, and ice cream cones. Our actual summer fridge was more like a few bags of Otter Pops and some frozen chicken breasts, so I spent a lot of time trying to get invited over to friends’ houses whose parents did get Swan’s deliveries (and had a pool!)
Now as a parent myself, I realize what a valuable tool my freezer will be this summer. It’ll help me feed hungry kids between summer camps, host neighborhood kids for cookouts and the occasional slip-and-slide afternoon, and, of course, enjoy the occasional summer stoop Popsicle myself. Here are the 12 must-haves I’m keeping stocked in my freezer this summer.
While I was growing up, my mom was always trying out the latest diet plan du jour. Weight Watchers, Jenny Craig, Slim Fast. There was the grapefruit diet and the cabbage soup diet (that was pretty memorable), and probably a few others I’m forgetting.
I learned on my very first Trader Joe’s trip in New York City that attempting to do my weekly grocery haul at 5 p.m. on a Sunday was a rookie mistake. Not only is there an obscenely long checkout line that snakes throughout the aisles, but there’s also a trail of people just waiting to step foot in the store.
Alas, I had an empty fridge, so I waited in line(s) … only to find that three crucial items on my list (baby carrots, hummus, and all variations of non-frozen chicken) were already out of stock. Yes, chicken! The trip was a total bust.
Homemade lemonade is an almost weekly occurrence in my kitchen — I started making a pitcher of lemonade to entice my kids to drink more water this winter. Juicing the lemons is a favorite task of my 3-year-old, but if left alone to it I find juicing 10 lemons a little arduous.
So imagine my delight when I learned a simple hack for getting the most juice out of my lemons without individually juicing them using a tool already in my kitchen. This simple hack works well for big-batch lemonade (and margaritas). Here’s a surprising trick for making homemade lemonade even easier!

I’ve always had mixed feelings about potato salad. I know it’s a summer staple, and you basically can’t have a barbecue, picnic, or cookout without potato salad, but I’ve just never been a big fan of the texture — specifically the big chunks of boiled potatoes.
I love mashed potatoes, though, and that’s why my interest was piqued when I saw that the Pioneer Woman’s potato salad is basically just mashed potatoes with potato salad seasoning mixed in.
This is the kind of dinner you make when you get home late and are greeted by a nearly empty fridge. In less time than it takes to call for takeout, you can grab a few ingredients from the pantry and assemble this modest, one-pot meal that’s immensely satisfying.
Orzo and a couple of cans of chickpeas are cooked together in a simple garlic and onion-infused tomato sauce until it results in a creamy mess that’s almost reminiscent of risotto yet is firmly its own. The only thing left to do is top bowls with chopped basil and plenty of grated Parmesan and dig in.

You can carry sandbags, kettlebells, dumbbells, barbells, or anything. The more awkward the better but do loaded carries as part of your training.
You bench press, do push-ups, and maybe even military press. You squat, lunge, deadlift, glute bridge, pull-up, row, and have tried countless “ab” variations. You’ve likely hit the treadmill, the air bike, and even tried battle ropes, but do you carry? The reality is you do.

When I was first told about Tabata I was very excited from the word go, however that excitement stemmed from the fact that I had no clue what it meant. I missed the first week of class b/c I was traveling for work so when I came in during the 2nd week I had some making it up to do.
It was hard at first b/c my body wasn't used to working out at such a fast pace, but once I got into a rhythm I started to feel very good. These classes are no joke. If you stick with it you will leave there feeling stronger, healthier and overall better about yourself and what you've accomplished.
I would recommend these classes to anyone. Darrin is a great trainer and he'll keep you going with his energy.
