This week my big kid starts first grade, and my littlest heads back to pre-k. I’m welcoming the return of our routine with open arms, despite the fact that back to school also means back to packing lunches and snacks, and getting up a little earlier to prep breakfasts and dinners before drop-off.

Of course, we’re still in the midst of warm weather that is keeping me from cranking up the oven and sweating during dinnertime, so this week I’m reaching for my slow cooker to assist me in making five easy dinners.

Servings: 4

Time in the Kitchen: 20 minutes

Ingredients

  • 1/2 cup Primal Kitchen Mayo
  • 2 Tbsp Primal Kitchen Organic Spicy Brown Mustard
  • 2 Tbsp full fat organic sour cream
  • 1/4 cup dill relish
  • 2 tsp organic apple cider vinegar
  • 1/4 cup grated carrot
  • 1/2 cup chopped green onion
  • 2-3 tsp horseradish (depending on how spicy you like it)
  • 3 cups (about half a head) of shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 Tbsp celery seed
  • Salt/Pepper to taste

Instructions

Shred cabbage, grate carrot, and chop green onion.

Mix mayo, mustard, apple cider vinegar, horseradish, celery seed, sour cream, and relish. Pour over veggie mix and toss to fully coat. Salt and pepper to taste. Serve and enjoy!

What kind of cybernetic enhancements would you get, if you could get any kind of cool mechanical devices attached to your body? I think I’d want a pair of super-fast running legs like the Bionic Woman (but an extra set of giant mechanical arms like Doctor Octopus from Spider-Man would be pretty great, too!). Cooking would be so much faster if I had two extra sets of arms, and cleaning would be a breeze.

I’m still waiting for that technology to make it to the open market, but in the meantime Japan has a portable dishwashing arm that might be the next best thing.

The public’s hunger for more of the inspiration that only Bourdain’s unique perspective can provide has resulted in a few major announcements. First, is CNN’s decision to continue to air new episodes of Parts Unknown this fall — a final season in which Bourdain travels to Kenya, Texas, Spain, Indonesia, and Manhattan’s Lower East Side. Second is the news of Bourdain: The Oral Biography, edited by his longtime assistant and collaborator Laurie Woolever, coming next fall. Woolever and Bourdain co-wrote his 2016 cookbook Appetites.

It seems like everyone is “going keto” these days, right? If you’re not familiar, the ketogenic diet (keto for short) is a high-fat, moderate-protein, and low-carbohydrate plan. “It’s typically rich in foods like eggs, meats, nuts, butters, cheeses, seeds, oils, and a few low-carb green vegetables. It does not allow fruits, most vegetables, grains, potatoes, sweets, or other carb-rich foods,” says Alyssa Ardolino, RD, nutrition communications coordinator at the International Food Information Council.

According to Ardolino, the goal of the diet is to produce ketone bodies (metabolites of fatty acids) and use them instead of glucose to fuel your cells, which is meant to lead to lower inflammation and, for some, weight loss.

Because the diet is fairly restrictive and excludes most carbs and many fruits, it can be tough to find snacks that are keto-compliant.
