I’m not vegan, but I am a big fan of vegan recipes. I’m always looking for ways to eat more vegetables, and I feel like plant-based recipes do a great job of keeping the vegetables front and center. During the winter, I spend a lot of time looking for plant-based, vegetable-heavy recipes that are hearty and warming enough to be appealing and comforting even when there’s an ice blizzard outside. This plant-based take on vegetable tikka masala fits the bill perfectly.

If there is one thing Ina Garten is known for, it’s her roast chicken. It’s her signature dish for Friday night supper with Jeffrey, and anyone and everyone who’s ever made it raves about it. (Five stars! 1,000+ reviews!)

Yet despite the accolades and fanfare, I’d never actually made her version before. My go-to roast chicken recipe is actually Jacques Pepin’s — I’ve stuck with it for years for it’s sheer simplicity. But lately I’ve been less enthusiastic about it because of problems with the skin sticking to the skillet and lack of crispiness. So I decided to give Ina’s a try and, perhaps unsurprisingly, I loved it.

I’ve been writing a lot about Trader Joe’s fantastic seasonal pop-up items (like wheat stalks!) over on Apartment Therapy. It’s my go-to favorite store for lazy decorating on the fly, and on the cheap.
