This past summer, when I was looking to make a wholesome, no-bake cookie that was snackable and satisfying, I wanted them to be a little higher in protein than the usual snack cookie — and simply using peanut butter wasn’t going to cut it. So instead of using rolled oats as a binder, I instead turned to quinoa flakes.
