My 4 years old son was diagnosed with Type 1 Diabetes when he was 1 year old. He was exclusively breastfed until that age so no exposure to gluten except from my breastmilk probably ( I have leaky gut and I was consuming sourdough bread from ancient wheat while breastfeeding). As soon as he was diagnosed and he started eating food, I put him on a gluten free diet and although he was dependent on insulin from then on (unlike the Danish children mentioned on the research above), his HbA1C levels are good since then. We once tried giving him sourdough bread from ancient wheat but still his blood sugar skyrocketed from that and could not be lowered for a long time after eating. I think this is a clear sign that even a small amount of gluten causes lots of inflammation in his body. From my experience gluten is something to avoid for life for type 1 diabetics.
