When you have a hectic week on your calendar, do you properly batten down the hatches when it comes to meal plans or do you let your planning go a little awry? Our calendar this week includes the return of spring soccer, dentist and doctor appointments, and the looming tax deadline.
Rather than give up completely on meal planning, I’m front-loading our week with three easy dinners prepared in the slow cooker with the goal of leftovers to feed us for a few lunches and maybe a scrappy dinner or two later in the week. Here’s how the slow cooker is my savior for another busy week.
