I am a strong believer in the power of mushrooms. It’s one of those things, I think, that goes with just about any meal. Making chicken tonight? Throw on some roasted mushrooms! Trying to add a little something-something to that grain salad recipe? Bring on the mushrooms, baby. I always pick up an extra carton or so of mushrooms at the grocery store, even if they’re not in my weekly meal plan, because I know I’ll find some use for them.
That’s why I was excited to stumble upon this slow cooker garlic and herb mushroom situation from Damn Delicious. It’s super simple to make on a weeknight, would go with just about anything, and it involves the slow cooker so you know it’s more hands-off.
