The Prize:
Lardo. What’s lardo? It’s delicious, precious, raw seasoned pork back fat from Mangalitsa pigs. You can slice it and eat it plain. You can melt it into a meal. It makes for a great, calorie dense snack if you’re a constant hiker. The winner of today’s contest will win four blocks of lardo, courtesy of Heath Putnam Farms. That’s roughly four pounds artisan pig fat in an assortment of seasonings (raw, garlic & oregano, Hungarian sweet paprika, black pepper and juniper berries). For the pig connoisseur, Mangalitsa pigs – also known as wooly pigs – are a lard-type swine. Their fat has such a light texture that it can be whipped like cream.
