Do you feel that? That sweet, sweet sunshine that’s slowly infiltrating our lives and promising warmer days ahead? I certainly can, and I’m ready to lighten up my eating routine as a result. No, no, I’m not talking about losing weight for swimsuit season (because all you need for a “beach body” is a beach and a body, amiright?) — I’m talking about stepping away from the oven and eating more of the green things my body craves during this time of year.

Fresh! Things! Are! Happening!

So that’s why I was excited when Pinterest recently released their top “healthy” salad recipes on their platform right now. They’re defining “healthy” here based on whether or not the recipe developer described it that way — because healthy isn’t one-size-fits-all. All of these salad recipes are full of fresh vegetables, hearty grains, and delicious vinaigrettes and dressings, and they’re exactly what I want to eat right now. Sign me up.
