Out of all the pots and pans in my kitchen, I reach for my cast iron skillet the most on busy weeknights. Although it deserves a little more TLC than some of my other pots and pans, its ability to maintain a strong, even heat, easily go from stovetop to oven, and fit my entire dinner inside of it make it worth its upkeep.
