Several years ago a newlywed Prince William asked Giada de Laurentiis how to make better lasagna, because he said he kept trying to make it for wife Kate Middleton, but his lasagna never turned out correctly. Giada said her advice was to make sure to let the lasagna sit for a few minutes after removing it from the oven, because that lets the lasagna reabsorb any liquid that might have collected in the pan, and it makes sure the lasagna leaves the dish in its characteristic stacked-pasta-layer-cake form. “It has got to set,” she told him. “Otherwise it’ll just be a pool of mess.”
