When I was growing up, vegetables played a big, starring role in all our dinners. And I’ve maintained that tradition in my adult life — especially since becoming a Registered Dietitian. But at the same time, I am a pasta fiend; I could probably eat it daily and not tire of it. So how do I get my pasta fix and keep my veggie-heavy diet? I let the two join forces!
You see, pasta can handle a lot of vegetables — way more than you might think. Load your noodles with so many veggies that they practically run the show and you’ve got a dinner that you can feel good about that still satisfies your craving for a good bowl of pasta.
