Paleo Recipe Resource Page

For years, my clients have been losing weight / getting healthy on my version of the Paleo Eating.
During that same time, the world has gotten fatter & sicker eating a mainstream “western” diet.
Luckily, over the past few years, more and more people have been introduced to Paleo nutrition. And while the number of Paleo diners is still very, very small, that number is growing.
As the Paleo population grows, new & better Paleo resources are being created to help newcomers learn the ropes of eating Paleo.
At the present time, the Paleo market is too small to warrant any big glossy celebrity chef Paleo Recipe Books.
But, there are a growing number of Paleo Foodies willing to publish their culinary creations on their Paleo Food Blogs.
Here are some of my favorites:

Dear Mark: PUFAs

In last week’s Dear Mark I took up a reader question about trans fats. While we’re on the fat subject, I figured it was a good time to keep the conversation going and cover an email I got last week about polyunsaturated fatty acids (PUFAs). Thanks to Brent for this one.
I loved your posts on trans fats last week, but now you have me wondering about all the other truths I know but can’t explain. How about polyunsaturated fat? When I was reading the Definitive Guide to Oils, I was having a rough time remembering exactly why PUFAs aren’t recommended. Can you jog my memory, Mark?
Let me take this one apart – separate out the good PUFA from the bad from the downright ugly. We’re talking everything from grains to nuts, corn and canola oil to fish oil. When it comes to PUFAs, it truly is a mixed bag.

What Are […]

Life is too short to work your butt off year-round. I am a firm believer in spurts of effort and then backing way off on those efforts and just enjoying life. Is your goal to workout as much as possible or to look and feel good? You can go periods of 3-4 months on a skeleton workout schedule and maintain an amazing physique, if you plan it out properly. After those 3-4 months you will need to put in more time, then you can go back to maintenance mode. I'll talk more about how to do this in this post.

[I like the idea of working hard towards a goal, like a two week tropical vacation. Kick butt in your career, get in amazing shape, and then stop and smell the roses…or in this case the coconut scent of your sunblock and the lime in your beer.]

Fat Guacamole Devils

Breathing new life into a tried and true recipe is a simple way of adding variety to your diet. Take deviled eggs, for example. They’ve been around as long as any of us can probably remember, although you don’t see them at parties as often as you once did. It’s not because deviled eggs aren’t good, it’s just that they’re not that exciting anymore. You might, however,  start seeing them served more often again if enough people see the recipe for Fat Guacamole Devils Tamara Baysinger entered in our Primal Blueprint Cookbook Challenge.

Her take on deviled eggs eliminates the mayonnaise and uses avocado instead. This loads the eggs with even more healthy fat and gives the filling a creamy, rich texture. A teaspoon or so of lime juice and hot sauce liven things up and just like that you’ve got a flavorful, interesting new take on a classic recipe.
While these […]

I don’t think anyone is exempt from the winter weather that’s hitting us all at the moment. Between the snow, the cold and the days upon days of rain we’re having here in LA at the minute, I thought a quick n easy soup would hit the spot. I made chicken for dinner last night and had some left over so I thought the obvious choice was to bust out a soup for lunch today and hey presto here it is. If you don’t have any leftover chicken like I did, buy a roast chicken and just use that. You’ll get a great flavour as well as having the carcass to make your stock. Perfecto! This is one of the simplest ways to make a soup as you basically just put everything in the same pot and simmer it.
Did I mention it’s flu season? A bit of homemade chicken soup […]

The Belly Whisperer

A little departure from our regular fare this Friday, the Worker Bee and I surely had fun with this one. We’ve shared our thoughts on the Biggest Loser in weeks past. Now we show you what the future of weight-loss television could look like if it continues heading in the direction it’s in…
“Oh, here’s a good one. It’s called the Pound-O-Meter,” Joe Gideon chuckles and holds up a device that looks suspiciously like a bathroom scale. “It’s a bathroom scale. But we trademarked the term ‘Pound-O-Meter,’ hoping it would become synonymous with weight loss. “Want to measure your weight, American consumer? You’ll need a bathroom Pound-O-Meter! You can still find them at discount stores and outlet malls. I think I make thirteen cents every time one is sold.” Joe Gideon is 73, fairly trim for his age, with more salt in his hair than pepper. He sits at a soda-crate […]

Every January 1st, millions of people resolve to get in shape and lose weight.
Unfortunately, before February 1st rolls around, two thirds of those people have fallen off the bandwagon, abandoned their gym memberships and returned to the normal diet of pizza & ice cream.
So, in an attempt to recharge your collective weight-loss motivation, I thought I would let you in on a recent piece of obesity research that concluded that…
Obesity = Inflammation = Cancer
.
Yep, cancer…the big C.
.
According to this latest research, obesity enhances the development of a form of liver cancer called HCC (hepatocellular carcinoma) by:

Stimulating the production of tumor-promoting cytokines (interleukin-6 {Il-6} and tumor necrosis factor {tnf})
Il-6 and tnf causes inflammation in your liver, and
Activates a tumor-producing transcription factor called STAT3
STAT3 activates the formation and growth of the HCC liver cancer

Or, in layman’s terms
Obesity = Inflammation = Cancer
But, it’s not just liver cancer.
Obesity also increases the risk of […]

Chef Wes Stepp, KnuckleUp's official Caterer

Chef Wes started out at KnuckleUp as one of Matt Costa’s first fitness bootcamp participants – he finished those tough 5 weeks over 25 LBS lighter, and has been coming to classes consistently ever since.
Wes Stepp is the owner of the popular Red Sky Cafe restaurant in Duck, NC. He’s been a chef in the Outer Banks for over 25 years, and his cuisine reflects the best of what the beach offers: fresh, succulent, mouth-watering dishes that have become an OBX attraction by itself.
But what most people dont know is that despite running one of the most successful Outer Banks Catering services, Wes always finds time to keep himself in shape – and we’re not talking about hours on the treadmill.
Far from it, actually:
